Boron-doped diamond (BDD) has high chemical stability and a large potential window (voltage range that can be applied for sensing), so it has great potential as an electrode for chemical sensors. . We are working on the development of a sensor that uses this BDD electrode to acquire "fingerprint information" on alcoholic beverages. By using sensors to acquire information about alcoholic beverages, which vary sensitively depending on fermentation, aging, production area, and temperature, and combining it with human taste data through machine learning, it is possible to quantify taste and aroma in one drop per minute.
